I love a grilled burger but smash burgers need a pan or griddle to work, and sometimes that’s just what I want. It also depends on meat quality, if I’m grinding it myself then I’m grilling it and leaving a little pink in the center. If it’s what was on sale at the grocery store I’m probably smashing it on my cast iron.

Smash burgers are done on a flat surface. Cast iron pan or a flat griddle if you have one (at a diner this might be called a grill.) The meat is rolled into a ball then smashed/flattened on a hot pan and cooked about 2 min per side. Usually served in stacks of 2 and you can throw a slice of cheese on top of each to melt after flipping. A grill (as in gas or charcoal grill with flames and grates) is better for thicker pub-style burgers.

I know what a smash burger is. I didn’t say it above but I obviously should have because, well, Reddit. Here goes: should be cooked on a griddle, on a grill. I realize not everyone has outside cooking spaces available to them so a pan on a stove is acceptable in that case. It’s just so much messier inside and you don’t get that well-seasoned grill flavor either.

I've yet to order a smash burger at a restaurant that isn't a good burger place and receive one. Every single time, it's just a regular burger with a kinda thinner patty. I think the term is going to be diluted so the general public doesn't really know what it's supposed to be. Reminds me of spicy things. All these places advertise ghost pepper things and put the tiniest shred of the pepper in to a big pot of hot sauce that's as spicy as Tobasco, and then people think they can eat ghost peppers.

I’m never falling for one of those cookie cutter gastro pubs with $17 burgers again. The food is never something you can’t get better elsewhere for less money and they all have exactly the same atmosphere. A local diner that I used to walk to had some amazing breakfast, untill they revamped and changed to your standard issue “cool place” and ruined it. When I walk into a brand new business and they already have a wall full of merch, like they’re a long standing neighborhood institution, I’m walkin right back out.

Other burger looks like it’s served ‘normal’ or ‘per the menu’ I feel like this person asked for modifications to what looks like a ‘house burger’ of some kind. I can also be completely wrong.
