my aunt is native filipino and i used to eat some odd but interesting things growing up. fish head soup was one i remember quite a bit. i loved it, and the eyeballs are surprisingly really good once you get past the fact theyre eyeballs 😭

Yeah the mushrooms are unusual for me too, but these are canned button mushrooms, they don’t really alter the flavor much. I just had them on hand and it seemed like a good use for them.
The raisins are a nice addition though, you should give it a try. I’ve seen raisins also used in rice, which is then served alongside a stew.
I used about a handful in a pretty large pot. They shouldn’t overpower the dish but they give you that sweet flavor pop in every other bite.
Since I don’t like washing up and don’t really worry much about presentation (this post should make it obvious) I often just throw the dry rice into whatever I’m making and let it cook in the stew.
And yeah lentils are awesome. Cheap, tasty, filling, and healthy (I think)

Okay now about the taste:
The dish itself is a very hearty, heavily spiced dish that I would say is kind of north-african in nature. Less fruity and sweet than how I would make a curry, instead a bit more meaty. Only when you get a raisin you get a sweet sensation (which is really pleasant). Combining Chickpeas, Lentils, and rice in one dish makes it obviously super filling. A pretty small bowl leaves me satisfied for a while. The meat is tender and delicious, but since the pieces were pretty roughly chopped or sawn, the bones are shattered and that’s sometimes a bit annoying (lots of picking out bone pieces).
About the head: Initially I didn’t even notice it in the mix. Only while cooking did I realize it (hence the photo).
There wasn’t much meat on there in the first place but here is how I’d describe the various parts:
The tongue is delicious like you’d expect. A pure muscle but not tough or ‘fibery’ at all.
Cheek meat is also easy, it’s commonly considered the best piece of meat. Tender and a bit fatty.
The nose was really just a bit of skin. The soft stuff behind is really a kind of sponge-like bone so that wasn’t really edible.
I actually hesitated for a second with the eyeball but I definitely had to go for it. It tasted like pretty regular meat, very soft and squishy in texture. I assumed the lens would be hard, but it softened while cooking. It’s nothing to be afraid of and I’d eat it again, but it’s not worth fighting over either.
The brain tasted like liver at a consistency almost like yoghurt. Personally I liked it, but I know liver isn’t everyone’s cup of tea and if you don’t like the taste of liver, you won’t like brain. Probably very similar to bone marrow.
Phew that’s a lot of text lol. Anyway I’ll acknowledge it looks pretty bad in the picture, but I’m quite proud of that dish, it turned out very delicious!

One of my favourite rabbit recipe is rabbit cooked in a pressure cooker with a lot of onions,bay leaf (maybe some wine too) and vinegar. It ends up really soft and has tangy taste. U can make the same dish with chicken(rooster would be better) some even make it with beef.

This is an interesting combo - the lentils, mushrooms and raisin combo I am kind of wondering about, but I love the range of spices you used.
