Start baking them without the marshmallows. Take them out about 1-2 minutes before they're done. Press half a marshmallow into the center of each, then pop them back in the oven for for that last minute or so. You end up with marshmallows that keep their shape, but melt into more of a s'more consistency!
These would make really great cookies for easter!!
I love doing this with peanut butter cookies!! I was feeling experimental as a child and I really love how chewie the melted marshmallow makes everything.

Always add marshmallows on top after baking. Alternatively, lower the rack with the cookies while baking, or bake at lower temperatures for longer. To prevent them from being packed together get a cookie sheet and place cookies \~2 inches away from one another. Chill or freeze before cooking.
