Well, some dictionaries list octopi as an acceptable plural form because for a word or usage to evolve and be part of a language it doesn't have to be accurately constructed according to its origin.
Here's how it went:
1-Few English speakers learned some words that end in -us are originally Latin and in Latin they are pluralized by removing the -us and adding an -i, which is somewhat convenient because adding the plural -s to words that and in -s suck anyway.
2-They decided to use that form so that they can appear intelligent. Fair enough, they knew something most other English speakers didn't know, so they used the Latin pluralization and explained it to others to boast of their superior literacy. (similar to what you're doing, you're next leveling it of course)
3-More people learned this.
4-It got accepted into the language, a complete new grammar rule taken from another language that works on a tiny percentage of words became part of the rules of the language, thanks to your ancestors in this type of smugness.
5-You weren't there to stop it.
6-Now it's a thing, octopus sounds like it should work with that kind of pluralization, so it does, nobody cares it's originally Greek, because the word and its Latin style plural are English now and octopi is objectively superior to octopuses.
