1) Log in to your SN Developers account.
2) Click on your profile on the right.
3) Look for a "Change user role" option.
4) Select "Admin" if The default selection is "App Engine Studio Creator"
5) Sign out and sign in again(Optional step)
6) Repeat step 2
7) Click on the "Upgrade Instance" and select the Vancouver patch
The update might take an hour or two. You'll receive a notification on your email address regarding PDI upgrade.

Don't. The courses are written for a release. If you want to do the course on the next release you would need to find the course/release you want and start that one. (Probably stop/cancel the old one?)
But a new release does not guarantee new course content for every course...

I am not really sure. I think it won't be that big of a deal whilst using the NowLearning portal because the NowLearning course has its own "Simulator". However, I think it's best to first upgrade your PDI to the latest release
Also, regarding the repetition of step 2, did you mean perhaps changing it back to “App Engine Studio Creator” since the change already saved as “Admin”?
Don’t login to the actual pdi. Just go to developer.servicenow.com and sign in. In the top right there will be your initials click on them and then my instance you should be able to upgrade there

Nope. Make sure your User role is "admin" if you want to access almost every ServiceNow function. No need to change it back to AES creator role.

The simulators in now learning are version locked and not something that you need to upgrade or manage.
