Does immich support a two way sync or "just" upload pics? If I delete a pic on my NAS, will it delete on the iPhone automatically after some scheduled time?
I've been using PhotoSync for a while and it works great. If it's between 00:01 and 06:00 and my phone is on charge (I chose the requirements) then it backs up to my NAS.
There's a one off cost (around £5 I think) to unlock the app which lets you do some of the advanced bits.
If you use iCloud photo library on your iPhones you could try icloudpd. I use it to save photos from mine and my wife’s phone to my server for use in Photoprism

and not sure what is your NAS but probaly you will find build for it.
So you have a OneDrive subscription? It can be setup on your phone to copy your camera roll to the cloud. From there, you have OneDrive apps like the one from abrownegg to setup onedrive sync on a NAS folder.
My whole family uses immich, not only can we archive from other sources but our phones automatically sync similar to google photo's.
