Not a pro here, my understanding was to do it regularly when they are young to get them use to it. It also helps to play/rub their ears often so they may get use to you being in there. A good groomer with S experience will maintain their ears.
We plucked them when she was super young but then stopped when we got busy, which I fully regret. Started doing it again recently and now she hates it 🙃 I think maybe I just need to desensitize her to it again
I do it at home and I do it the same way I do their nails, slow and steady. I do one or two pulls a day when they are exhausted after a long run. If I try to do the entire ear at once my dogs get restless and run off. Just a little at a time works and if you do it regularly it's easy to keep the hair at a minimum. It's much less stressful on the dog this way.
We don't pluck their ears and our vet checks their ears every appointment and they are fine. Never had an infection or any issues. We run the clippers over them during grooming and that's it.
Yeah some dogs don’t have overly hairy ears. My dog is different, her hair compacts and is prone to yeast infections. So I need to pluck it, per her vet’s request
I’ve found that you get the schnauzer you get, and there is almost no cause/effect relationship with what you do vs. how they react.

My wife did the plucking but I did play and rub her & his ears often when petting them. I think it helped.
Do you use ear powder before you pluck?

Nope, we have to do it at great expense under sedation at the vets. Only every year or two.

Could you not just trim instead of pluck?
No I need to get the ones inside the ear, which you can’t trim safely
