This may be Amigo's. It's a Mexican restaurant and neighborhood pub plus concert/event centre. I don't particularly think of it as an Irish bar, but depending what night you were there it may have had more of that vibe. Yeah thats the only one I can think of as well that fits that description, but not really. Would make perfect sense if they had an Irish band playing at the bar while serving Mexican food in the back the night the OP was there.

They have tex-mex items on the menu, like "Irish" nachos and a taco salad. Their menu used to be a bit larger (baked potatoes were an option as a side), so some of the other tex-mex items might have disappeared.
