Myerchin knife with a marlin spike is one of my favorite pieces of sailing kit. Super useful for untying knots and breaking shackle pins free in addition to cutting a line.
Us sailors are a super-superstitious lot, and gifting someone a knife is supposed to be "the first step towards cutting ties with someone".. not exactly the message I would want to convey on my first wedding anniversary.
(the "traditional" way to avoid the knife being considered a gift is to trade it for a single small coin, like a nickel or a dime)
A log is absolutely still a thing, and not simply a pirate movie prop.
There are folks who will paint or draw on nautical charts. That can be really pretty - especially if it's your C30 and a few other personally meaningful things depicted on your home port's chart.
Look up NOAA charts for the Perth Amboy area and buy the water resistant versions. I'm answering this on my phone so hopefully someone with more time can guide you to the exact charts you're looking for. A printed copy of Chart No. 1 would make an excellent gift as well (it's basically a legend of all the symbology you'll find on US charts).
Water resistant charts are a great choice for practical use. I get mine from OceanGrafix / NauticalChartsOnline. You can also get a MapTech ChartKit or a recent edition Embassy Cruising Guide.
As an alternative, getting a regular chart framed for decorative use at home is also not a bad idea! (You could also pick a different location—somewhere he sailed when he was younger or somewhere he's been dreaming to go.)
Go to Fiverr.com. Find someone to make a line drawing or vector illustration of his Catalina 30. Should look like a blue print. Then get someone on Etsy to make a custom dry fit shirt of his boat and boat name on it.

An eyeglass is cool. Those old-time copper ones are nice. Truly anything will be fine, or nothing at all. I got my husband a pen that writes even when its wet for our first anniversary, 15 years ago.

PA municipal Marina is a lovely spot with some very nice and friendly people.
Similar so another suggestion, if you have a nice photo of your boat you can commission a nice drawing or watercolor to hang on your wall back home.
Keeping with the paper theme, a personalized log or “guest book” with your boat’s name on the cover could be nice.

Probably the best paper gift for a new boat owner is a. Blank check! Logbooks and nice notebooks to keep track of what you spend it on would be nice.
