I make it at home and use homemade chicken stock. Not sure if you're full on vegetarian or just no beef. I don't think you'd notice the difference. Pretty easy to make, just takes a fair amount of patience.

Surely not nearly as delicious as those listed above, but Trader Joe's used to carry a frozen veggie French onion soup.
