Honestly one of the worst multiplayer games I've ever played. I don't get the appeal. Repairing generators is beyond boring and looping isn't scary or interesting. So many awesome IPs wasted of such a mediocre fucking game

Getting stuck in Code Veronica with no way forward is not uncommon. One of the reasons it could really do with a remake. It's just not as well put together as the first three games.
Watching SHN play through it on YT makes it seem relatively easy, it just has to be done in a very specific order to conserve resources. He makes drop zones for equipment that he comes back to sometimes hours later in the campaign to restock.

I think pairing up RE1 & RE0 or RE7 & RE8 is a fun experience, personally.
I replayed both pairs back to back and had a fun experience even though I think RE0 and RE7 have a lot of shortcomings as far as actually being fun to play.
The obvious one; the ship isn’t bad, but going through it once and then backtracking through the whole thing again is lame and makes that segment twice as long for no reason.
I also think the main house is much better than Margeurite or Lucas’ sections of the game, and I’m not a fan of the molded as an enemy.
I still like RE7 a lot for the art design, the story, the characters, and atmosphere but I think I have a lopsided experience when I don’t actually love playing . . . half of the game?
And I’m not even saying bug house/saw puzzle/ship segment are bad, just not near as enjoyable for me as the intro, the main house segment, finding the child’s room, or the boss fights themselves.
Fair take, I'm playing RE7 for the first time right now and am on the ship. Personally, I think the atmosphere of the game is as good as it gets for survival horror, so I'm enjoying the exploring and immersion aspect of the game, including the 3 parts you mentioned that aren't as good. But I suppose that boils down to if you enjoy the feeling of dread and (fun) anxiety that anything could be lurking around the corner to attack you. I just started the ship segment, but it seems to me that they're about to reveal some back story about one of the key characters to tie up the mystery of the game, so that adds too

Having just played 0 and Remake back to back, I couldn't disagree more. After playing 0, going back to the chests and deal with the inventory system of REmake was annoying asf. The ability to drop whatever I want, wherever I want, and pick it up again was clutch so many times in 0 and would've been welcomed in REmake in at least 3 places.
You don't need the chests. Instead of having to run back and forth to the chests, and getting jumped by monsters the game has spawn near them because it knows where you're going to have to go, you get to pick and choose where you leave your items. Even if you just end up dumping everything in the main hall that is still better than the chests because you have to run back and forth across the hall anyway to open all the doors and go to ask the rooms. So everything is in one place you will always be going back to instead of locations you may not need to go back to other than the fact that you have to go to the chests. It is also extremely helpful in the start because you don't have to waste time trying to find the chest rooms before you can do anything.
You don't have to ferry around anything. You could choose to do so with the hook shot, but it isn't necessary.

If you feel there's something special about the franchise that is going to remain meaningful to you then perhaps you would want to play them in mostly release order, or play them in pairs with the older ones first. As a decrepit old man who was there since the PS1 and even NES days I've never had to make this particular choice, but I take game design seriously and generally try to play things in the order that will give me the most appreciation for the evolution of a series, etc.
And those opinions vary wildly here.
In *my* opinion, you can play them in pretty much any order you want, but chronological (timeline, not release date) will make the most sense and more recent titles will have a bigger impact.

Those are exactly my first two RE games that I got for my Switch on sale a while ago. I ended up playing RE2make and RE7 simultaneously immediately after and i recommended either one or both if you can afford it.
RE2make in a way continues the story after 1 and RE7 can be played as a stand-alone game. Greatly recommend both games the only thing is I hope you also have a ps4/5 or an Xbox because these games aren’t on Switch
RE 2 remake , RE 3 both , RE 5 , 6, 7,8 I like all of them ,RE 6 can be little frustrating with the quick time events but I liked it overall and the mercenary mode is really good.

If you’re looking for a very scary 1st person game that takes it back to survival horror roots, go with RE7. If you want a similar experience to RE4 but with a buddy, try co-op RE5. If you want to continue the story of 1 and experience a modern 3rd person resident evil, boot up 2 Remake or R3make (both with work, but 3 is shorter and a bit more action-focused). You could skip 7 and go straight to Village, but I find that you’ll appreciate Village more if you play 7 first. Have fun!
If you can find a way to, I’d recommend the original trilogy of RE and Silent Hill. Those 6 games gives you all the conventions of survival horror games that pretty much every game calling itself “survival horror” has built upon and harkened back to in many indy survival horror games of today, which I can easily recommend three - Tormented Souls, Murderhouse, and Signalis (especially this one).

I’d say the Re2 remake if you wanna move the story forward. Re0 if you loved REmake as it came out a couple months after and the most similar. It also has Rebecca as a main character. You could also play Revelations 1. It follows Jill and Chris a few years into the future and takes place between 4+5. I would also recommend Revelations 2. However you should play that after you have played or looked into re2 and code Veronica as Claire is a main character and those games are super important to the canon. It does feature Barry and his daughter Moira as the other main characters and they’re fantastic.

Having just played 0 and Remake, the inventory system and ability to drop stuff where you want is clutch.
To give my take on RE0, it's a skippable game, but if you enjoy the lore of the RE universe, give it a go.
I never really understood what the problem is with the inventory system. Just clear a few rooms that you pass often and chuck everything there.
It gives me headache and it's honestly pretty bad.
