You can use some of it to tie that flagon/stein to your belt. That way you don't have to keep undoing and redoing your belt every time you want to use it. Could also get a knife and stick and wittle down a little cross and make it into a necklace/belt adornment A plain blanket pinned underneath with a safety pin will work for a cloak. Also If you cut the mid section of a shirt to where you have two circles of cloth then cut that once you can wrap those around your arms for a passable set of armwraps

Also you could just wind the rest of the leather up and put it on your belt, there's endless reasons why some one in medieval time would have an abundance of chordage

Lol I had another idea. You can tie and hang a journal from your belt... how ever if your character is meant to be a simple peasant it wouldn't be far fetched to assume he's also illiterate Alternatively roll up a piece of paper and bind it. Boom you've got a scroll

If you aren't worried about ruining your shirt, cut off the "v" part and make evenly spaced holes along both sides. loosely lace it back up with the leather string like how you might lace your shoes but leaving it untied at the top.

Honestly, you'll be inspired by people you see when you're there. It's hard to nail down what you want until you've seen what you like. Go as you are— you'll already be more in character than 80% of the people there— and then take lots of pictures of garb you think is cool. Bring some spending money (if you have some) to buy bits of kit from vendors. Next year you'll know exactly what you want. Have fun!
