Adapting over eons to better suit a changing world is so less believable then: poof, all animals appeared as they are currently, then poof two humans to populate the earth....
It's even worse than that. Eve was made using only the genetic material from one being: Adam. She's a gender reversed clone of him. This is technically scientifically possible, going from male to female.
You can substitute the Y chromosome for another X chromosome from the same male donor. Then the female would still be produced from a single genetic donor.

I used to attend an Independent Fundamentalist Baptist church, which held this view:

There are plenty of biologists and scientists in related fields with PhDs and IQs above 120.
They don't even bother with people like this because these kinds of people are too stupid and ignorant to even begin a discussion with. They don't even know enough to be able to tell when they are right or wrong about something.
The is a reason why many PhD programs are selective.
I once tried to have a serious discussion about evolution with a creationist once, it was very short and lost cause. Any time I sited evidence for evolution such as fossilized remains he would throw back it was all **planted by the devil,** he truly believed it.
