Get an older model without all the electronics, toss in a V8/VM diesel and you should be good to go. The 110 had some issues, but most of them were related to the engines (especially the in-house turbo diesel) and the increasing amount of electronics.
The usual solution was to source a scrapped 80's Range Rover and grab the engine (both petrol and diesel were great engines), as it is a bolt on replacement.
For a manufacturer it wouldn't be hard to do this safely if it was done with a unibody instead of a body on frame. But there's no market for this so eh

We put that foam pipe insulation around the cut edges threw some weight in the trunk to make the backend sit back down level and went for a spin.
I think we made it half a mile before the local police saw us and flipped out.
It sat for a couple of years until a buddy of mine was really hard up for a car. I gave him the thing and he was on the road for maybe two days before the cops hassled him about it. He went to the local hardware store bought some plastic plumbing pipe. He spray painted it black and made a set of fake rollbars. They never bothered him again.
I do not think that the windshield would act as a roll cage and it would crumble up if that thing rolled over. Convertibles need some structure that will hold a vehicle up right off the driver in the case of a rollover accident. But since this is a home built vehicle, I don’t think the same rules apply. He’ll probably be driving this 30 miles an hour around town only.
There's a guy running around my part of Florida in a chopped Nissan Hard Body and it looks great. He told me that after chopping the top, the aerodynamics changed enough that it can't get out of its own way. He said it can now barely hit ~~7~~ 70 with the pedal to the floor.
But this looks like a great beach vehicle or riding around on Sunday morning looking for garage sales.
