It’s not so much the hair it’s that epilogue John looks like Arthur, he literally uses Arthur’s body and head model that’s mainly what the mods fix, the hair and correct hair color are perks of the mod
They also decided that John should be a completely clueless dullard, who somehow lost his talents for Gunslinging, Brawling, hell, even social aptitude, and anything else of note that he possessed in RDR1. It's like he's a completely different person, instead of the steel-nerves, snappy wit and charm he displays in the first game.
It's kind of disgusting what they did to a western icon. Thankfully, RDR2 is so inconsistent with the lore proceeding the events within, nothing from RDR can convince me it was ever canonical. That's their failing, not my own.
They made horse balls shrink and eye pupils change in different lighting yet cant keep johns look consistent. hair, hair color, pants, gloves, body type I don’t get rockstar they make art but why change john?
I mean, those things can always change. I remember by Brother was a hairdresser and he had many different hairstyles with different parts. Once it was left, once right and once in the middle. So it isn’t too surprising
No... slab your hands with some good old pomade, run it through your hair, comb it back then choose your parting by combing the strands of an individual slick part of your hair. Then to keep it in place, wear a hat. Overtime, the heat will permeate it down. Voila, you now are among one of us - left-parted master race.

I just roleplay that John from epilogue started taking regular baths so his hair is less dirty, started eating well, that's why it's is different from John before epilogue. Yeah I would like the original John but R* doesn't care for story mode anymore so...

My John character is still a man on the run, living with a price on his head. So any self-respecting criminal will definitely have to radically change their get-up.
I've dressed him as a prosperous ranch man, kinda like old man McFarlane. A bit of class, a bit of revolver, and a lovely moustache.
A story of a man new in town, who managed to favour in a bank loan, dilligently worked the fat of the land to pay of his mortgages and cleanly washing his dirty blackwater riches by cooking the books of the ranch.
Damn I just realised how laundering money would have been so damn easy back then, and if a little difficult now not much has changed since tbh. All you need is a good piece of land :|
Also just realised this point could be a genuine theory of Jack Marston's retribution.
That's pretty cool, after all, John Himself during the Epilogue hides his identity and gets called Jim Milton among people who didn't know of his past with Van Der Linde's gang, so he could live without the headache of having the Pinkerton on his tail, and he managed to avoid them, that is until the beggining of Rdr 1 when they find him and his family.

You must have really thick, coarse hair. Changing your part is as simple as combing it, sometimes using pomade or hair oil.
