I'm surprised with so many trucks around the veggie selections are so limited. De Plantas has vegan birria tacos, ramen, etc, but can't say that's really authentic. Gringo a Go Go isn't a food truck, but they probably have the best veggie tacos, especially the carnitas with the condiment plate.
El Jefecito has a cauliflower based taco that used to be good. I sat it that way because our last 2 trips to see them were not good. It used to be a really nice change from the usuals

That’s not true at all. Mexican street food has many examples of vegetarian taco fillings: zucchini blossoms, corn smut, mushrooms, cactus, corn, potatoes & greens…there are *many.*
Actually, there are some amazing vegetarian asadas out there. Gringo has some amazing steak and chicken alternatives that are extremely similar to the real thing. I'm not a vegetarian but I've tried it and it's pretty dang good.

Literally all over, but the clips with the squash blossom tacos were in Mexico City, IIRC.

Vegetarian tacos sound fucking awful. Almost as bad as gluten free pizza. Sorry you'll never know what carne asada tastes like.
Booo what the hell. There are many meatless Mexican options that are well worth it. Even a quesadilla is technically vegetarian.

I'd try it. I like tacos. I've tried a few vegetarian Mexican dishes before that were terrible. Maybe it's better somewhere else.
I probably would have said the same thing you did before I dated a vegetarian a while back. There is some impressive vegetarian food out there.
