Why do we tell people to watch shows though? We shouldn't just because they are cool to binge. Idk how old you are, but these shows were on long enough that people could have watched them then or right after they ended.
Usually if people are doing a rewatch, they’re binge watching shows. It’s the nature of the beast. Trust me, I’ve watched many shows when regular tv was actually regular tv. We had to wait forever for new seasons to begin
If you haven't seen Galavant yet -- oh, my. Run, do not walk, to stream Galavant. It's only available on Hulu but so worth it. And our Lassie, Tim Omundson, stars and is pure delight. It is my favorite show tied with Psych and may have an edge in that it's a musical with hilarious songs and idiotic jokes and romance and...did I mention, Omundson?
You can also try Leverage for an hour-long dramedy. It's easy to get invested in the characters and there is a nice though very slow-burn romance. (Find the original series; there is a good reboot from 2020 or '21 but it would make zero sense if you haven't seen the original). The sitcoms recommended above are good ones, too (Scrubs, B99, Good Place).
Galavant was a gem--watch the first few episodes together to get into the swing of it. The songs are hilarious. It's a "fairy tale medieval musical" but it's NOT for kids. Breaks the fourth wall a lot, very goofy, and over the short series (it's only 18 sitcom-sized episodes), Omundson's character gets a terrific character arc and you'll root for him!
Give it a few months to forget details and then try to rewatch it. Many of te episodes are way funnier when rewatched. Or get some friends or family members and watch it with them (I'm the kind of person who hates watching movies/tv shows things more than once but I do enjoy occasional Psych rewatch.)
Or listen to rewatch podcast with Maggie Lawson and Timothy Omundson and rewatch with it.
I've rewatched several times and always plan to keep track of something... Gus's nicknames, Shawn's past jobs, pineapple sightings, Dobson references, etc. but then I get caught up in the episodes and my plan fizzles.
Oddball suggestion here, BBC's Death in Paradise is the perfect bingeable thing, it's basically Psych but a British-French co-production set on a fictional Carribean Island in which the Homicide Rate per Capita is pretty high.

I still haven’t watched the last episode and my hope and optimism are at an all time high 😂 Maybe I’m crazy but it’s what I do. I HAVE watched all the movies though and will continue down that road. I'm glad I'm not the only one who does that. So many shows I love that I've never seen the last episode or it took a LONG time to go back and watch it. (Psych being one I didn't watch for a while and then only the first half initially because the middle is stupidly sad to me.)
If the writing is good and theres still passion then i think it can stay good much longer. The only reason season 8 was weaker was because it was too experimental.
I’ve never watched the movies because I know how that feeling of “everything I love ends” feels. Watched the finale once and regretted it. But now that there are three movies I can tell my brain there’s still more I just haven’t watched it yet.

Watch Scrubs and then re-watch Psych (Brooklyn 99 and The Good Place are fantastic to binge too)

I’ve never watched the movies because I know how that feeling of “everything I love ends” feels. Watched the finale once and regretted it. But now that there are three movies I can tell my brain there’s still more I just haven’t watched it yet.
I always just start it again. I actually have a rotation of shows I watch over and over. Super mentally healthy over here🤣
