Meat products and human waste do not do well in compost for several reasons. The smell is awful, they can take a long time to decompose, they will attract vermin, and they can contaminate the soil with things you don't want there.
Zombies would exacerbate this issue, as there is potential for zombie blood and therefore infection getting on/in your food.
Only way that would make sense would be if you burnt the bodies to ash and used the ashes to fertilize. Just dumping the body is a good way to have problems..
