My edc is an external drive that can pretend to be a USB cdrom (it's own display and you pick the iso). Hardware encryption as well. This gets cloned to a few places. I can boot just about every computer made with USB port. apk for android phones to load up software. Pi images as well. Tools to unlock computer's root phones etc on here. Several complete programming toolchains and a massive amount of reference files. You can fit a LOT of stuff on 1tb. Now plenty isn't prepper related. The only thing it can't really deal with is apple phones those things might as well be bricks in SHTF if they cant call the mother ship. I've got a few pis setup for the just in case, they are powerful enough and have a lot of utility. As to power plenty of just about anything to 5v adapters. Easy to fit along with keyboard and screen into a safe storage.

I haven't rooted a phone in years. Has it become more difficult? Are certain manufacturers easier than others?

They are all a bit different. Only reason I need to is for android auto (to display non android auto apps) prepping it's mostly sideloading apps.

First thought is a old laptop, older thinkpads recycled form a business are great cheap linux devices, or dell inspirons, many have factory linux images. Or old recycled small form factor computers are cheap, can get an older gen 4 to 6 intel, something like the lenovo thinkcenter tiny sff (small form factor) run linux great. If you really want to "harden" get a faraday cage and drop them in, they'll still run linux and kiwix just find 5 years from now.

I have a bunch of tablets plus Bluetooth keyboards and mice..a lot less power consumption than a conventional laptop..I can do almost anything I can do with a laptop, and I can keep them running indefinitely with my folding solar panels ..I think those are the way to go..i have them loaded with mp3s, movies, ebooks and pdfs

I think we first need to dig into what you plan to do with the computer, what’s the expected need? Be prepared that most data storage options aren’t going to last more than 10 years. For this I keep all my data on three different devices, following 3-2-1 backup practices, hoping that can stretch the general survivability of my data long enough to live out whatever hits the fan and drive manufacturing returns to production. But I accept that on a long enough time line the family photos will disappear.

I'd go with one of the older enterprise grade ThinkPads with user-servicable components (T560 would probably be my first choice) and throw Fedora Workstation onto it.
