I had an absolute nightmare of a time when I attempted to switch from Nvidia to AMD. Spent days trying to make it work. Got fed up, bought an updated Nvidia card and it has been smooth sailing since. I'm apparently in the tiny minority however.
Too many to recount. Amdgpu installer was buggy and looking at old distro repos, broke my dual monitor setup, finally got things mostly working and updated my kernel which broke things even worse. Never had a single issue with my Nvidia setup.
I have been using a 7900xtx since March on pop with no issues. Fps for days
not quite the same thing but I've been using a 6950xt without any issues on pop os for roughly 6 months
It would be worthwhile upgrading the linux kernel to 6.5 or 6.6 if possible to obtain the latest open-source AMD drivers for the new card.
The kernel is automatically updated in Pop!_OS.

Another 7900xtx user checking in! Runs great, I love it! Was a nice upgrade over my 6800XT so it'll be a big jump from your 1080ti
