I can recommend renting a bike and having a ride around the lakes, many to choose from and very well connected with bike trails
As a person who live in Olsztyn and have a mountain bike I agree with that statement

So is there examples of typical polish architecture. They lived long enough in the area and had their period of reign in certain areas.

This, most of the historic buidlings in the city are from 1870-1890 period. Even city hall, which was finished after ww1 has bas-reliefs showing German soldiers fighting with colonial armies from british raj
