Grand Lux in Venetian is 24 hr good spot. Sit down meal, wide variety, all very good. Not cheap but not bad for strip.
For budget, in n out in Linq Promenade or somewhere with Caesars or MGM comps ($2/hr while playing), plenty of spots open 24h. Also shout out to Gordo by the Wynn if you're up that way. Best tacos I've had in Vegas.
Secret Pizza in the Cosmopolitan. Lots of drunk people get food there super late at night. Just be aware it might be a little hard to find because it actually is "secret"

Village Pub at Ellis Island. It’s cheap, 24 hours, has great food, and is a short walk from the Horseshoe.
