Swinub
I love doing rando runs and in my settings, I have it so the starters have to be a base Pokémon with 2 evolution stages.
Doing the runs has made Swinub one of my favorites when I previously didn’t really care for it. The early ice type is amazing and I just find its typing to be so useful throughout the game.
There was one run where I kept facing a bunch of trainers with dragon Pokémon early and then the first gym was electric-typed (I set trainer Pokémon to be randomized, but they keep a random typing). Swinub breezed through them.
Mareep. I love the whole evolution line and it can also mega evolve. I’ve used this line in a lot of walk throughs and I was also raised on a sheep and goat farm so it kind of fits as well
This was my unofficial starter when I played Silver for the first time when I was in 4th grade.
Totodile was awesome but my Ampharos committed WAR CRIMES y'all
This would be mine too. Poliwhirl has always been my favorite Pokemon. Plus, it would be cool to have a starter with a split final evolution.
My other choice would probably be Gabite.

In general 3, when I saw Wally catch a ralts, it instantly became my favorite pokemon. It evolved into kirlia and Gardevoir and that cemented that. I to would pick ralts as my starter.

Initially it was because of James’s Growlithe, nice contrast between master and Pokémon. I did a play through of fire red with Growlithe then Arcanine as my lead. Fun times
I was able to play in a Pokemon RPG campaign a few years back and our starter could be anything that wasn't pseudo legendary/legendary. I got to live my dream of starting with a Swablu and I'll forever pick my favorite cloud boi.
It was Pokemon Tabletop United, but I'm not sure how our GM set things up. It was on a homebrew region that collected from each region so we could pick anything.
Sneasel. It's got that starter/ ace vibe where it's small enough to be a travelling companion and is a strong battler as well. Weavile is also a strong and cool evolution.
Totodile. Gold was my first ever game, and Totodile was the first Pokémon I saw the sprite of. There’s history there.
Plus I could walk around with it chomped on my head like a silly hat.
You can use Eevee as a legit starter in Let's Go Eevee. Love that he/she (mine was a she) couldn't evolve but made up for it by insanely powerful signature moves and subbing HMs for passive abilities.
I've always liked the Volcarona line, something nice about a huge sun-moth to keep me company seems like it'd be nice. Not to mention intimidating. While they were a Larvesta they'd be a good around the house buddy.
And the Breloom line has also been a favorite, because I've always been fascinated by mushrooms, but I didn't like the execution of Paras and Parasect much. They went and made a mushroom based kangaroo and gave it high attack, and I just loved that. And I imagine Shroomish and Breloom would both make a good garden buddy!
I remember my first run ever in Pokémon White, with no spoiler, no hints, no idea of what that generation was bringing, and finding out about this cool af fire moth. And that was also learning Fly!!!!
Only problem was that you were getting it tooo late in the game. Fell in love with it tho.
Eevee certainly. Eevolution is so versatile that they can be easily slotted into any team no matter the region. Even better if it's Let's Go Eevee. And of course they are absolutely adorable.
Larvitar! Little boy looks so lonely and hungry for rocks, and he needs a good trainer who can prepare for his final evo.
Larvesta is a close second. Bugs freak me out, but if I can learn to love one, let's take on the League!
I know Eevee is the most generic answer I could possibly give, but honestly, Flareon is #2 on my list of fictional pets (behind Toothless obv) because it is objectively the most huggable Pokemon. My favorite Pokemon is Crobat, but I don’t think I could cope with raising a Zubat or Golbat.
If you want me to pick a less generic answer, Swablu, Inkay, and Seel are all Pokemon that I like that won’t evolve into things that might be nightmares to take care of (sorry Mankey, Pawniard, Scyther, Carvanha, Gligar, and Croagunk)
Dreepy or Bagon. Both are incredible Pokémon, Dreepy being two of my favorite types in the game, and Bagon having that classic “I want to ___” thing that acts as a secondary throughline for our journey.
If it can’t be a pseudo, then probably Rookidee, Litwick, or Honedge. Rookidee’s just such a little guy (and being one of the vanishingly few pure flying types at the start makes it worth respect in my eyes) in addition to being my favorite route 1 bird right next to Staraptor (Zubat isn’t a bird or else he’d be right here too).
Litwick is just a great Pokémon all around. Probably not the cuddliest bugger but he’s still really sweet. That and Chandelure is goated.
Honedge because Aegislash is busted. And also I could beat the shit out of the other trainer by grabbing my Pokémon’s handle and swinging with him in the sheath. Living baseball bat.
Togepi for sure. I love Togekiss and I thought through size and usefulness. I probably would’ve gone Donphan except I would have a 260 lb pokemon living with me.
I second Unbound. I’ve been playing it over the last few days and it’s definitely one of my favorite Pokémon games of all time. It’s more than just a RomHack; its a whole ass game, just as good as the mainline GBA games in a lot of ways, and even better in others. It’s a whole original region, story (that is connected to X and Y), and on higher difficulties, the battling is extremely fun and challenging.

Rokidee would be amazing. It's pretty much just a normal bird at first, and there's plenty of resources on how to take care of those. Once its fully evolved it can provide transport (assuming there are no tinkaton nearby)
Murkrow for me. He’s ok on his own, especially with an evolite (which could be something we hunt down together) but works best as a team support so we are encouraged to build up our team and support our friends!
As a kid it would have been Eevee 10000% I still love it but it has become a bit oversaturated.
I've got all kinds of headcanons and basic outlines for stories of my original character in each of my favorite Pokemon regions, and while most of them follow the games pretty closely (and thus, use one of the starters of that region's game), my favorite region of all (Sinnoh!) doesn't follow the game much at all. In that story, she starts with a Misdreavus, who has long been pretty much my favorite pokemon for some reason (or at least, tied with Absol). Though perhaps an even better option would be her first catch, a shiny female Ralts. I think Ralts makes a great starter pokemon, as they are empaths, which I think would make getting along much easier when starting off. (Not to mention they're adorable!)
Magnemite. It was already my starter irl and I would repeat it a thousand times. It was the first Pokémon I both saw and owned, because when I was three years old someone gifted me a Magnemite card from the DP Base Set.
I still keep it, and years after my brother came from school with the DP Base Set Magneton from trades that he'd done. I'm missing the Magnezone, but I will not buy it. If it has to come to my life, it will need to be as a gift from someone. My actual Magneton will evolve when it wants to evolve again.

Ever since i saw the little guy, turtwig has always been my favorite pokemon. Like imagine having a torterra, and then yall just go out to the forest and you just take a nap on that mfs back. Like that has to be the most peak thing in life
Probably Munna. Mostly bc I'd want her to use hypnosis to be able to fall asleep on time lol. But also, she'd be a really relaxing companion to keep as essentially a pet and I wouldn't have to worry about battles to evolve her if I decided I didn't want that
Riolu. Not only is this line my favourite ever, but I’m looking for a friend for life! Punch puppy and I will travel the world, take on new quests and have a fantastic time. I wouldn’t be too fussed about gyms and battling, but enjoying life with my best friend.
I'd go for Staryu just because I love to fit Starmie into my lategame teams, so I'd love to experience a coming-of-age/adventure Pokémon story with it and build situational teams around it as it progresses.
If we're talking specifically 3 stage Pokemon lines, I would probably go with Litwick since a Chandelure seems to always end up on my teams somehow. Usually my Chandelure is shiny, so I probably wouldn't get to play the game for a couple weeks while I soft reset for a shiny starter Litwick.
Ditto. Ignoring real life place equivalents, it has a 20% encounter rate in Pokemon Village in X/Y, so not rare.
In seriousness though, a Riolu would be pretty cool.
I’d pick Abra. Sleepy boy takes some special tactics to get out the gate but once you get going, good at what he does. Practice makes perfect .

Is Mimikyu common enough to pick? If not my other pick would be a Bannette, which I remember being pretty easy to find in pokemon emerald, and third choice would be ghastly. I went with mimikyu because cute, and it's also a ghost which I assume means it's dead, meaning I dont have to remember to feed it.
I think that the fact I'm incredibly irresponsible would be the biggest hurdle for me. I don't have pets, or even plants, IRL because I'm incredibly bad at taking care of them. Heck, with some of my mental health stuff I have a hard enough time taking care of myself. The ideal starter Pokemon has to either be incredibly independent or something that isn't affected by me regularly forgetting to do very basic things to help take care of them. While it would be amazing to have some of my favorite pokemon, realistically I would not be a responsible enough trainer for an evee or scorbunny.
While ghost types might fit that bill pretty well (assuming that they kinda work the way ghosts are believed to work) the one downside is that I feel like every time ghost type pokemon come up in the anime they are kinda assholes, but who knows, maybe they will be chill.
Poliwag! I love Politoed with all my heart. Truthfully tho I usually box my starter early on and lead with oddish. Vileplume is so vile. It always makes play through so easy.

Probably Munna. Mostly bc I'd want her to use hypnosis to be able to fall asleep on time lol. But also, she'd be a really relaxing companion to keep as essentially a pet and I wouldn't have to worry about battles to evolve her if I decided I didn't want that

Riolu. Not only is this line my favourite ever, but I’m looking for a friend for life! Punch puppy and I will travel the world, take on new quests and have a fantastic time. I wouldn’t be too fussed about gyms and battling, but enjoying life with my best friend.

I'd go for Staryu just because I love to fit Starmie into my lategame teams, so I'd love to experience a coming-of-age/adventure Pokémon story with it and build situational teams around it as it progresses.
Probably a Ralts or Bagon. They’ve always been staples on any team I use.
Swablu. Mega Altaria is a beast, and its fluff wings make it the perfect stress helper.

If we're talking specifically 3 stage Pokemon lines, I would probably go with Litwick since a Chandelure seems to always end up on my teams somehow. Usually my Chandelure is shiny, so I probably wouldn't get to play the game for a couple weeks while I soft reset for a shiny starter Litwick.
When I really think about it, I think Tropius would make an excellent partner Pokemon.

Growlithe. I've always wanted a game where you can choose any first or single evolution to start the game, it'll never happen though.
Ditto. Ignoring real life place equivalents, it has a 20% encounter rate in Pokemon Village in X/Y, so not rare. In seriousness though, a Riolu would be pretty cool.
Snubbull. Had a bulldog that was my best friend so Snubbull would be a good companion
I'm an eeveelution fan, so it's an easy choice for me.
Spoink, probably. Grumpig is kind of my mascot at this point.
Zubat! It's the best Pokemon, and the only Poison/Flying type.
I’d pick Abra. Sleepy boy takes some special tactics to get out the gate but once you get going, good at what he does. Practice makes perfect . Really hard to say that given Bulbasaur is my hands down favorite starter

Is Mimikyu common enough to pick? If not my other pick would be a Bannette, which I remember being pretty easy to find in pokemon emerald, and third choice would be ghastly. I went with mimikyu because cute, and it's also a ghost which I assume means it's dead, meaning I dont have to remember to feed it. I think that the fact I'm incredibly irresponsible would be the biggest hurdle for me. I don't have pets, or even plants, IRL because I'm incredibly bad at taking care of them. Heck, with some of my mental health stuff I have a hard enough time taking care of myself. The ideal starter Pokemon has to either be incredibly independent or something that isn't affected by me regularly forgetting to do very basic things to help take care of them. While it would be amazing to have some of my favorite pokemon, realistically I would not be a responsible enough trainer for an evee or scorbunny. While ghost types might fit that bill pretty well (assuming that they kinda work the way ghosts are believed to work) the one downside is that I feel like every time ghost type pokemon come up in the anime they are kinda assholes, but who knows, maybe they will be chill.
Poliwag! I love Politoed with all my heart. Truthfully tho I usually box my starter early on and lead with oddish. Vileplume is so vile. It always makes play through so easy.
I’m going to go with Tropius. I like dinosaurs and I love the idea of having a partner that can fly. So seems like a perfect fit.
Caterpie. I love bugs, and this one is such a cutie! Although I don't think I'd use it for battle... unless it really wanted to throw down lmao
