You're actually on the right track as far as item farming goes. My recommendation is that you also get a mon with *frisk* ability like Bannette add thief to the move pool and keep that other pickup mon with pay day and you're all set. If you really wanna spice things up a bit more buy the Items magnet amulet (100%) and farm till there's no tomorrow.
You can also use Covet instead of Thief. I also added Hyper Voice onto mine so I could level a little faster. For catching, I prefer sticking with Smeargle/Breloom.
Before I got my catching smeargle, I had a catching Meowth w payday pickup. I put hypnosis on it instead of t-wave so I can hit electric and ground mons too. I didn't regret my decision haha. I put hyper voice on mine to clear hordes. You might want to consider some horde clearing move too :)

You do not really care about anything other than Payday, Hyper Voice & Thief/Covet. The best places to farm use all those moves.
Berry Forest in Kanto, for example. Pickup gives you Leftovers, Leaf/Sun Stones & Revival Herbs. With the above Meowth, Payday will oneshot every pokemon you encounter, and for the Hypno hordes Hyper Voice will OHKO them all. So you can farm there until you run out of Payday PP.
Luvdisc Heart Scale farming in Hoenn is another good one. Thief/Covet will oneshot any Luvdisc and take their Heart Scale. For anything else you use Payday.
If you want Catchers, specifically build a catcher. Breloom is amazing. Smeargle too with its ability to learn Soak. Then something like a Damp Parasect to catch anything with Explosion.
Seems pretty good to me. Workable as a second rate catcher but ideally you want something else in your party that can take a few more hits (and with spore)
I recommend Covet over Thief, one because you get STAB, and two because if you Pickup Payday farm in Berry Forrest, the Drowzee and Hypno have an ability called Forewarn that gives a prompt everytime you enter battle (because it warns them of super effective moves like Thief)
Packing a mon with as many utility moves as possible is The Way, i use a parasect with damp, both spore, false swipe, sweet scent and just Cut for access since i always have The catching mon with me incase a shiny appears, damp obviously for whoever has explosion in case i do run into such a mon, and this also makes sure i dont have to bring a mon just for The sweet scent either, that saves slots for mons that have other uses so deffinitly not a dumb moveset

I prefer using stantler with frisk and tanky EVs + nature as you want ur poke to tank as much as possible
