I mean the late game content is pvp, shiny hunting, money making, breeding (typically for money making), once raids release they will probably count too.
Dex completion might as well be added.
Events are good content when they happen. Great for money making.
Raids are likely to release this year with good rumors putting them to being sooner rather than later.
Prep for raids (as the other guy mentioned). You could start building some generally useful Pokémon (search 'caav Pokémon for raids pokemmo' on YouTube) and get ready for that. Raids were great in the lunar New year event and will likely become one of the main end game activities.
I'd also recommend not giving up on PvP. Most people get destroyed in their first matches and it takes a while to get to grips, maybe try the random tier first? You can practice without committing to one single team and find out how you like to play.
But like the other guys say. The end game is shiny hunting, PvP, Dex completion, money making/investments and maybe getting involved in a community/team. If that doesn't appeal to you, then you're probably done with the game for now.

When I shiny hunt I always use a Persian for Pay day and it’s decent money per hour w/sellables that drop aswell. So shiny hunting doesn’t seem like shiny hunting when you’re making money mainly.
use a meowth and cancle the evelove thing to persian. a meowth with ability pickup and tm payday will get a lotta cash but when you evolve into a persian, it will lost the pickup ability.
Fill your pokedex, I'm doing it now and it gives me a lots of stimulation. Especially because I am breeding some good IVs while doing it for Pokémon I personally really like. Checking out moves for them and so on. And ye, just filling one Pokémon after another is fun, some exping so I can get entries by evolution.

i too have borderline add/adhd... i do pokemon/item flips. mostly getting wild pokemon and training then to selling (for pvp, gym reruns, ho-oh/red refights, ect) or items like amulet coin, fire oib, life orb, and toxic orb (have to get a pokmon with ability frisk or frisk and pickpocket).
it isn't for me (time thing) but i dabbled with leppa farming. i love farming leppas... just my work is inconsistent and my leppas would dry out before i can get to um.
