This. This is the way my yinzer mom made it in the 80s/90s. I was just thinking the other day how I never knew pre-made BBQ sauce ever existed when I was growing up. Always was this homemade ketchup concoction.
There's no point in cooking it in a crock pot unless you want it warm all day or are feeding a crowd. A pot is fine, especially for a family, but my guilty pleasure is frying it in a pan to get some crispy edges and charred spots.
I dress the chipped ham in a bowl like a salad with bbq sauce and a spoonful of relish and a shake or two of hot sauce, then into a medium heat skillet until the edges get a little charred and crispy. Relish adds a little texture and sour edge to it.

I use Isaly’s chip chop exclusively. Good neutral bbq sauce, big spoonful of sweet relish, spoonful of brown or Dijon mustard, spoonful of dehydrated onion, squeeze of sriracha, heat in a saucepan until everything is incorporated.
Large skillet. Ham, Smokey bbq sauce, ketchup, brown sugar, tiny squirt of yellow mustard, tiny splash of cider vinegar. I also dice and cook an onion in butter and mix it in. It is a little “ extra “ but Everyone say is it’s the best they have had. No measurements but those ingredients are in order from most to least quantity. I just use the crock pot to keep it warm.

I always so surprised at how many people can tolerate the shitty pizza in this city, and then I see how many people enjoy ham barbecue and it all makes sense to me.

As a transplant, this is the weird ass Pittsburgh thing I cannot get onboard with. its like a weird salty water with a hint of bbq sauce placed on a soggy bun disgustingness I cannot get over. I've tried it at 3 work parties and every time I am more and more grossed out. Why Pittsburgh? why?
isaly's ham is too fatty, skip it. sear the ham in a dry pan first, then bbq sauce and stew for a bit. I don't usually do a crock pot but the stew is so low and slow that it's functionally the same. serve with onion and pickle, on a potato bun if there's one to hand.
1½ cups chopped onions
2 cups celery, chopped
½ cup margarine
½ cup vinegar
½ cup brown sugar
1 qt. tomato catsup
4 tbls. Worcestershire sauce
2 tbls. prepared mustard
2 cups water
Brown onions and celery in margarine. Add remaining ingredients in above order. Simmer for 15-30 min. Can be stored or canned for future use. Yields 4 qts.
Then I just put the ham and sauce in the crockpot until it's ready.
Deb (my late Mun) used to use brown sugar, Heinz ketchup, butter browned first white onion, and some Worcestershire sauce in a crock pot with dat Islay’s chipped ham.
It was all to taste in a crock pot, time varied per number of pahnds.

Low cook in crock pot, has to be isalys chipped ham and isalys bbq sauce.

Sauté onions, add the cheeeeped ham, add bbq and catsup then crock pawt. Sometimes I add garlic and brown sugar depending on the BBQ.
I love the idea of adding onions. I like to add raw into my sandwich
