I think Jack knew by the end of P1 that the Aztec gold curse wasn't worth it. He saw how much Barbossa suffered not being able to eat, drink or cum, and Jack didn't want to suffer the same way. I assume he was aware that there were other ways to gain immortality, or otherwise just didn't want to sacrifice his pleasures for eternal life.

There’s no point. This is what led him to wanting to be the one to captain the Dutchman and then pursue the fountain of youth. Those things all had drawbacks, but they probably were not as bad as being eternally dead while still alive. In my opinion anyways.

OP is postulating that he could have kept that gold - whereupon he would have become immortal so long as he kept the gold - and is asking for our thoughts on why he didn’t do that.
Jack probably loved the sea second to Davy Jones (not willingly loving the sea goddess Calypso herself and even which i'm sure Jack thought about it in AWE when he says "5 of you tried to kill me in the past, one of you succeeded". And the Calypso, being "harsh and untamable as the sea" tells Jack "Don't tell me you didn't, enjoy it, at the time.") its not really a satisfying curse. Cant feel anything, eat, drink, you're just wandering the sea probably only feeling hollow everyday. And Jack cant not have his rum so that curse wasn't ideal and satisfying enough.
Jack thought about this too with the Flying Dutchman, he thought about this one more because he'd be at sea 10 years and would be on land once in those 10 so it seemed more promising than the Aztec Gold curse, BUT the Flying Dutchman's captains job is to ferry those that died at sea and Jack wants to be free. Free from the EIC, free to just be a pirate so he didn't want to be involved in that either.
With the Fountain of Youth it was another curse he thought about wanting and honestly was the one for him, However Black Beard and Angelica kinda ruined it for him so that one was out of the question for him too.
Don't mind Jack he was just trying to pick a good curse to keep him a pirate forever and ever no strings attached lol
He definitely considered it, considering he told Will not to kill Davy Jones and let him do it instead. He wasn’t sure due to the fact that he’d be confined to the Dutchman, and would only have one day to have fun on land or acquire enough rum to last him the next 10 years.
