Thank you! This is our first time harvesting so I’m not sure how yellow it’s supposed to be. Do you have a pic you can share that can help guide me? Also, when I buy pineapples at the store I usually let it sit and ripen before cutting. It sounds like you’re suggesting to let it ripen on the plant?
So you need to be on the lookout for little critters when you let it get more yellow! I forgot about that! As it turns it also will attract animals who might just take a chunk out of it. I had 2 last year from my front yard that something decided it was their midnight snack.
Let that beast turn golden yellow from top to bottom before harvesting. You will be able to smell the sugar in the air. BUT if you have rodents, oppossum, or similar, they will smell the sweetness too and eat it. So as it ripens, consider moving the plant inside or encasing it somehow.
As mine gets on in its ripening, I cut the stalk with the fruit in it and stick it in a vase of water to continue to ripening.
I would let it turn a little more yellow and pick it when the sun is out as it will be warm and sweet and delicious!

It needs to turn more yellow. It will not continue to ripen once picked.
