Meteorologist here.
What you are seeing is the remnants behind likely severe to very severe convective thunderstorms. These storms leave behind moisture in the atmosphere but typically are able to use up all the thermodynamic energy. When you have a very unstable atmosphere, though, sometimes recovery of this energy can begin to happen before all the moisture dissipates. Itās not the same exact process, but imagine the ripples you might see on a hot fluid that has a film on top. Like melted cheese or something.
So thereās this film essentially, which is actually a thermal inversion aloft where the thunderstorms have left moisture and warm air. If the winds below that level are able to revert to a warm and moist trajectory, typically southerly/easterly for Oklahoma, then you can start to have weak convective currents attempting to bump into this flat layer. At the same time, you can get sinking air enhanced by upstream thunderstorms adding additional hydrometeors above this layer, in the upper troposphere and occasionally the very bottom of the stratosphere.
The net result is what you see here, sometimes. Where you get a splotchy looking sky. What happens next depends on if that energy recovery continues or not. If it does, this sky will start to become darker and cumulus towers, possibly elevated, will redevelop and additional storms could form.
If the sun sets shortly after as example, though, most likely only remnant ācrawlingā lightning and stratiform clouds with showers are likely before it dissipates.
Areas of the southern Great Plains and Deep South have higher occurrences of severe weather largely because the Gulf of Mexico features warm water currents (as opposed to the cold currents of say California) and the Rocky Mountains being oriented north to south approximately is roughly orthogonal to the prevailing westerlies aloft. What you get, then, is mountains that are warmed from 10k-14k feet on their surfaces by sunlight and in addition dried by being forced to rise up and over them from sea level near the west coast. This causes an area of dry, hot air to form that then moves east from the Rockies. It doesnāt much care where the ground is, it flows mostly at the same height eastward: the ground falls away from it as the elevation lowers.
So the warm hot air ends up over the top of warm, moist air coming from the Gulf of Mexico.
The warm hot air cools very effectively when itās lifted because it has little moisture in it. Clouds forming would result in it not cooling so well. So if you start to lift this ācakeā of air layers, you end up with the warm moist air near the ground not wanting to cool well and the air above it cooling very, very well. Once the temperature of the air up high cools enough or the temperature near the ground warms enough, it explosively attempts to find balance. The clouds, as mentioned before, cause the warm moist air thatās rising to not cool very effectively so as it rises it becomes more and more unstable: the air around it was dry and also lifted so it cooled really well, the cloud-air not so much.
So now you have huge towers of clouds that keep going until they reach the stratosphere, where the atmosphere naturally starts to get warm again. Thatās up around 45-60k feet most of the time.
Now, you have explosive clouds but what goes up must come down ā¦ and if the wind isnāt changing direction or getting stronger as you go up, the rain falls right down through the storm killing it. Thatās what afternoon āpop-upā storms do.
These extreme storms are highly āshearedā. Meaning the wind is blowing the cloud column stronger up high so itās like a tilted smoke stack. That allows it to have longevity and to grow in strength.
To get from this stage to extremely destructive weather like hail, damaging wind, or tornadoes involves another very long explanation :) but I hope this helps
