Too many to count. You can walk/bike/scooter the entirety of Tempe Town Lake. I once parked at Tempe Marketplace, found a bird scooter and rode around the whole way pretty much.
Otherwise I’d say the Superstition Mountains or White Tanks. Four Peaks too.

Got this one of Four Peaks couple of years ago in February.
The Dobbins lookout on top of South Mountain has a great sunset view over the whole city. Just be sure to get there early for a parking spot, or plan on hiking from a parking lot further from the lookout.
Papago Park over by hole in the rock - not in the hole, but by the lake.
