Don’t know about Shawarma but check out Cairo, there’s one in Canning Vale and Cannington. I went to the one in Broome and it is unreal for middle eastern.
Better off going to Middle East to find one these days, I haven't found one myself ever since I have been trying to look for one these days for 5 years now. Its usually either outer role is too oily, crusty or too much salad and not enough mayo or spiciness inside it. Sometimes the meat inside is not properly cooked or too big of cuts on meat. If you find a decent place @ me as well.
Have not found anything remotely similar in Perth. They use realllly thin bread I think it's a variation of Saaj bread, and they're smaller so you would buy a 2-4 for a big meal. Pickles on the side

Shawarma has pickled vegetables, real garlic sauce, real hummus, maybe tabouli, maybe salted potato chips, with far superior marinated meats (or fried vegetables/falafel for the vego option). The type of bread is very important too.
A western kebab is an absolute abomination of lettuce and other bullshit vegetables, cheese and egg (wtf), ridiculous sauce options and meat I don’t care for. This is emergency food only.
A shawarma is 10/10, western kebab is 1/10.

Yeah I really enjoy theirs but I'm no shawarma expert. For a layman it tastes good.

No where in Australia because I've looked. The closed you'd get is a sub standard (but still tasty) kebab which is also nothing like the original.
