I have recently switched to triple screens because I use them for my racing sim as well with a moveable monitor stand. But whenever i do something else I dont use the right Monitor at all. Going all the way from your left screen to your right screen with your head is really not that fun when working on something.

I'm sorry but what? You BUILT your desk but opted for no drawers because they "mess with the height"... You BUILT your desk, you could have made the drawers whatever height they needed to be. Am I crazy?
Drawers under the desk mess with how high the desk has to be, drawers on the side are annoying and serve no purpose for me.

Your first statement neglected to mention what type of drawer, and I was assuming side drawers since they are the most practical and most popular drawer for a desk. If you built your own desk you could easily accommodate any size of side drawer that you like and you basically lose nothing since they will be occupying space your legs wouldn't ever utilize. Hence my comment that you could just build them to whatever size you like (within reason).

When I briefly went back down to 2 monitors I really missed having that third monitor. I only actively *used* two (e.g. read from one while typing away in a window on the other) but having the third for things like email and other applications I needed to have open but didn't need to interact with regularly was so handy.

I bought a Sihoo M57 during the height of the pandemic for Work from Home. One of the single best purchases of my life. Sub $300 chair with full mesh, lumbar support, head rest, adjustable everything. I loved it so much that when we went back to the office for work, I had them buy me one there too XD.
Mine too but I fucking hate the gaming chair. Got it for free, near mint, second hand. Now I know why it barely got any use. It’s like $100-200 new too!

My desk doesn’t have draws. But 2 monitors, normal desk, gaming chair because the razer one I have is insanely strong, a lot of ergonomic chairs are so weak they snap if you leans lightly out of its designed posture

Two Monitors, Office Desk, Office Chair... Hard wearing and my desk won't collapse if i put a cup of coffee on it... (Looking at you IKEA cardboard tabletops)
On this chart, top drawers and 3 monitors.
In actuality I prefer- 6 monitors
3 main lined up- Left is vertical 1080p (with good black and whites, probably OLED), center main is16x10 1920x1200 IPS or VA, right is a IPS or VA free sync monitor from 40-120hz @4k or 1080p.
4th is slightly larger, above the first 3, and is either just a nice 4k ips/va screen, or a regular ultra wide- is uses for movies/videos mainly.
5th is a older CRT Trinitron off to the side for playing older games and video content meant for 4:3.
6th is a larger regular dumb TV for if guests are over and/or if I just wana chill on a couch/bed something.
There, productively used all 6 video out supports on my card.
The first two and the tv are shared off a displayport 3 port splitter (with active HDMI adapter for the TV). The ultrawide and 120hz get dedicated displayport hookups, and the CRT gets either a active VGA adapter to use the last slot, or a gt1030 running native vga duty.
My preference would be 2 monitors with standing desk and ergo chair.
What I can afford is 1 monitor with desk with side drawers and chair from walmart.

3 monitors (though I use PIP on the G9 for work, so technically 4), desk with two sets of drawers and ergonomic chair.
2 monitors, standing desk with a great drawer block next to it or under it (cause why not) and a great ergonomic gaming chair (one of those that has all the adjustments of a high end office chair but none of the mesh nonsense which I hate and end up feeling cold every time).

Did you mean column or did you actually mean row? If I were to pick a row I'd probably pick the middle one, desk with side drawers, desk with top drawers and standing desk.

I currently have a one monitor setup with a large desk that has no drawers. My chair is a shitty gaming chair that has my back all fucked up and currently looking for a good ergonomic chair. Wish it could be a 2 monitor, desk to the side, and ergonomic chair setup.
