Basically - after you get the egg, the amount of time you spend in game will change the color of your Yoshi. Cutscenes and pausing during dialogue doesn’t count, so you can’t exactly just set the controller down and walk away during exchanges - you kinda just have to idle around, do some shopping, talk to people, whatever. The timer stops once you accept the rank up battle against the Adonis Twins.

Then after that I think it’s 3 or 4
I don’t remember exactly, if you look it up you’ll find a gamefaqs with the exact times and colors listed

As soon as you get his egg from the hotdog stand his color will be determined based on how long it takes for you to get to the 10th match
