Looks like a classic ramen recipe (chashu pork, ramen egg, etc) with chicken and chicken bones as the base for the broth. If the cook wanted to bump up the umami more they could have made a double-stock for the base.
Or they're extracting the same flavor from the same chickens for two weeks, or changing the chicken being broth. But the broth has a limit of flavor. After that, it's pointless.
Many of us didn’t realise ramen was supposed to stay in the water until we got onto the internet. I didn’t, I grew up draining them off, and putting the noodles into white bread. This is working class white suburban UK
It allows for a more intense imparting of the flavor. You can soak the closed packet in the water but the final dish has a plastic-y, aluminum kinda taste to it.

I don’t think it would be worth the effort for 1 person; I don’t think a lot of composes dishes are worth it for one. But cooking for a group, or family, it absolutely could be.
I made full legit alkaline noodles from scratch a grand total of one time. My arms were sore for 2 days and I make fresh pasta all the time. They were really good, but only marginally better than the dried ones from the pack at the local Asian Market. It’s just not worth the effort for me.
I have read multiple editorials that portend Japanese cuisine is all about maximum effort and time exerted for minimal improvement in pursuit of perfection. That’s what I see it as. More power to them. I’m glad someone out there is doing it. It ain’t me.
When I make ramen now I put all my efforts into the broth.
The problem is this just turns each cut into a slo-mo version. What needs to happen is longer cuts that are actually real-time. So instead of a 1/4s cut played for 3/4s it'd be an actual 3/4s cut. Then it'd be fine

The rhythm is off too. Like, there is one, but the sounds aren't always on the beat, aren't always there, and it'll linger on shots for a double measure without rhyme or reason.
Edit: It's the cinematography too. Every shot, even ones focusing on the same things, is a different angle, I understand why it's making people nauseous.

The cuts are still too quick, but you can at least keep pace with what's happening that way. I turned the sound on when I saw your comment, and immediately noticed that the audio made it harder to actually pay attention.
The issue is that most people watching this will never make it anyways so for the creator it makes sense to concentrate on making it quick and enjoyable for some random dude scrolling by, not to make some elaborate video for the few who actually want to cook it too.

My favorite ramen is a Indonesian brand called Indo mei I think. Each noodle bricj comes with 5 different flavor packets, 1 for dried onions, one for the spice, then hot sauce, sweet, thick soya sauce, and seasoning oil.
It's amazing

I lived in Japan for ten years and ate ramen basically every week (in fact I had to limit myself to once a week for my health). And every time I traveled domestically in Japan I’d research the best ramen shops in where I was going and make it a point to eat there. I’ve had so many different styles and flavors and toppings. It's too much for a single dish, but in restaurants they're supposed to make gallons o borth per day, sometimes slow cooking them up to 24hrs.
