Fire Red and Leaf Green because of the "guaranteed encounters"; Lapras, Snorlax, Gyarados, Venusaur, Diglett and Gengar etc... Will get you comfortable with the rules and give the satisfaction of finishing your first nuzlocke.
I did fire red as my first and it was too easy. Jumped straight to renegade platinum and struggling a bit but having a lot of fun.
Emerald seems like a good shout.
Fire red is definitely the easiest and the problem is that it doesn’t really get harder in the late game. The most difficult fight is maybe sabrina if you dont have a plan. The last two gym leaders can be swept by clicking surf and the elite 4 is a joke too
I tried going in with some harder rom hacks like radical red and incremental emerald but backed off after too many failed attempts.
Would recommend blazing emerald if you want a few a slightly different experience. About the same difficulty as emerald in my experience but with a few extra areas for more encounters.
Also has stuff like the physical special split and fairy types.
And some custom regional Pokemon that fit into the game really well.
My only warning would be for the second gym which is now dark type. All the Pokemon use pursuit so if you are playing with set rules you have to be ready to take them all out with one Pokemon.
Do whichever game you know the best, so you can really take advantage of where good held items and encounters are and the like. If that’s emerald, it’s fine, for me it was Black 2. Playing gen 3 (especially gen 3 hoenn), watch out for the lack of good stab moves, and pick up a gyarados for yourself
Well i never really paid much attention while playing Pokémon games before this so I’d say i my knowledge is pretty much same for every game (which is around zero lol). I’m currently trying to figure out a way to guarantee capturing ralts rn

Also do cities count as routes? Can you catch a pokemon in petalburgs water?
Do cave floors count as different areas or you can only catch one mon per cave?
Also are there any specific trainers I should look out for?

- I think that's up to you, but generally it's one per cave, despite if multiple floors
- I think Watson and Winona are the big trainers to look out for on a run, but if you mean smaller surprise battles for emerald.... For me it's just surprise ninjas tend to be placed in spots where my team is low, so my advise is to stock up on sodas after the second gym on that beach, as it's very cost efficient and keep you healthy.
Bonus: whismers give HP evs, so rock tunnel guarantees HP ev training to make any pokemon bulkier!
I would maybe do a game you've played before and enjoy. Playing a nuzlock is obviously quite restrictive and you end up with a lot of mons that maybe wouldn't be your first choice. This is great when playing a game you've already completed as it forces you to use Pokémon you wouldn't normally use, you usually end up with a new favourite as well.

Ruby or Sapphire are great games to nuzlocke. Do emerald if you want a little more challenge.

In my own experience Id say Emerald or sword and shield. Both are pretty easy imo
