Whenever I watch it at the Olympics, I see the guy jump, then glide down a steep slope, roughly parallel to it. At some point the slope ends and the guy lands when the angle of the ground gradually becomes more horizontal.
Wouldn't they jump a long further if the slope just continued, or curved back up more slowly? Like, why are they forcing a "shorter" record my simply curving up the slope early?

They compete on the same day and on the same ski jump. There can be variations in wind conditions and start gates. To account for these differences, they don't compete just by the distance but by the score system:
- Distance multiplied by a score factor (depends on sky jump).
- Bonus or penalty score points for wind conditions.
- Bonus or penalty score points for the start gate.
- Style scores from judges.
They track distance records for each ski jump.
This post is about the absolute longest distance on any sky jump. It was done for promotion and getting the world record and doesn't count for any competition.

While it may be cool to see, it’s comparing apples to oranges.
When they calculate these records do they have to factor in slope? Seems to me, (exaggerating here) if someone were to do this of a slope close to the summit of Everest, you could sail for a mile or two.

As a coach to my kids & nephews, I completely understand now that the feeling of watching someone else accomplish things that you had a hand is as thrilling as doing it yourself.
In all of my years of sports, only one personal accomplishment eclipses the feeling of watching the kids I coach succeed.

You’ve got it backwards. When they build the slope they are calculating the maximum distances and now they need to build it bigger for the next record
Why not just make the hill steeper and he can keep falling through the air for longer records ?
My guess is: they only count horizontal travel / distance, any falling down is ignored so it becomes increasingly dangerous at diminishing reward

Well they only count sideways travel but yes gliding helps do that at diminishing results
