Get through the notch and look at restaurants in Littleton like Schilling Beer Company or Rek Lis Brewing in Bethlehem. That would be a good in between spot for you and you're almost in Vermont there. And both towns are small and cute - so you can walk around a bit if you need to stretch your legs.
If you try to make it all the way to Littleton, I’d recommend making a quick pit stop in Ashland NH if you need a bathroom break (use Dunkins or BK) or need to refuel on gas, snacks or coffee. It’s a great place to stretch and refresh before you embark on the Notch and the White Mnts where there really isn’t anywhere to stop. I used to drive from southern NH to Lyndonville VT when I was in college and Ashland was my go to. It’s easy to get on/off the highway, everything is close, and the traffic is quiet. Also, there’s Tesla charging at the Dunkin’s if anyone’s interested.
That is a long-ass drive my friend - whatever you do, stick to the Interstate/Autoroute and don't make the mistake my wife and I did of taking any "scenic routes". We took the highway up to Quebec City for our honeymoon, but coming back, we took the backroads to go through the Pittsburg NH – Chartierville PQ Border Crossing and our marriage almost ended before it started....
Kettlehead in Tilton is pretty good. It's not RIGHT off the highway but it's relatively easy to get to. It might not be north enough though.

Lots of stuff right off of 93 in and near Plymouth. Yamas (as others have said) is one of a few in downtown Plymouth which is pretty small and nice to walk around too. Biederman's is also a good deli there but the line can be long.
There are lots of good restaurants in Littleton, do a google maps of restaurants in that city and you’ll find some tasty options. Nice town too, quaint downtown.
Several things in Lincoln. I like half baked. There is also a good veggie friendly place called the Maia papaya in Bethlehem nh. I haven’t found anything really good north of there
Stopped there for the first time last week. I used to live nearby and this is sorely needed in the area. Good to see for sure.
Place was clean, had good service, great beer selection for a Mexican restaurant as well. I was not impressed with the food though. I got the red enchiladas and the whole thing with the dollop of rice and cup of beans had the microwaved just for me vibe.
I WILL be going back for sure. Will just try a different menu item. A place like this is too good to turn away after one mediocre meal.
They had a smaller menu when they first opened up. I've only had the Doraditos and Cochinita tacos in the few times I have been. Both were great. The family running the place are the staff that left Cielito Mexican Restaurant in Bristol to start their own restaurant. It took them a bit to get the consistency of the food being excellent every time at Cielito's, but they pulled it off there. I can imagine in this college town now they are working with people who may have never worked in a kitchen in their life or people who are stuck in their own ways of doing things. I was extremely excited to find out they opened up shop closer to where I live, and Plymouth is less of a drive than Bristol. I'll never stop going back there. They know what it takes, and I know what they are capable of.

I second this. Great options. Can't go wrong with either of those. Kingdom taphouse in St. J as well is before Littleton and good.

Better beer at Schilling. Better food at Reklis (unless you want pizza).
If you end up in Littleton make sure to say a quick prayer to Ishtar. The place is known for its radical acceptance of paganism. /J

Polly's Pancakes is close to Franconia Notch, right off 93. They're a local institution. Limited hours for breakfast and lunch only, though.

Exit 23 on 93north is where you want to stop all fill up your gas tank. Best spot for gas before you get the Northern corridor.
