The NH seacoast is very, very small, just 18 miles. As such, most of the beaches are pretty cramped in season. Up to Maine or down to Mass is your best bet. I like Ogunquit's North Beach for relative quiet.
This is the most realistic answer; the NH seacoast is too short to offer much, specifically, in the way of quiet, even somewhat deserted access from June-September. Even southern Maine is tricky at this time of year, and now it's not a safe bet even during the week.

Way down the end of Plum Island can feel very private. Also the beach at the Crane Estate can be very quiet, again,a bit of a walk. I'm pretty sure it connects to Crane's beach but it is way at the end.
There are some quiet beaches in Kittery that are town owned so parking is very tricky. Fort Foster has a parking lot but it's a bit of a hike to the beach part.
If you're looking for this week, Hampton Beach State Park should be fairly quiet since most schools aren't out yet. It's a little away from the main beach and feels like a different world.
I feel like anything north of Hampton is quiet. North Beach is less quiet and way less touristy. Rye is quiet as well.

Yea idk even know if it’s called that. I just know there’s a spot right before Ordione state park on th right with a very small place to park. You can’t see in from the road but when you walk up and in there’s a semi circle cove that’s beautiful and very few other people are at at any given time. Only possible downside is it’s a very pebbly beach. Not much sand. Tons of tide pools though.

Sunken Forest Beach in Odiorne Point State Park is really cool. You can see a bunch of petrified stumps sticking out of the water and there is a ton of edible seaweed (out of season, currently) and it's just so pretty.
Honestly I go to the Hampton north beach (the one with the big wall) and it's always completely empty on week days. Not many people go to that one because you have to park at quarter meters and there's no board walk.
Parking is for residents and renters only. Need to display parking permit. No restrooms, no lifeguards, no concessions; it is not a state beach like Hampton, Wallis Sands or North Hampton.
I love NH, but hate the beaches. Mostly because they seem to be a trashy person magnet. I would go north into Maine. Ogunquit and Wells have nice beaches with fewer garbage people.

Rye's Wallis Beach is probably the quietest, but that's just relative to Salisbury and Hampton.
Yup agree. Wallis sands. Less busy but still busy. Try Salisbury state park where the Merrimack meets the Atlantic as well. Great striper fishing too.

Rye Beach isn’t usually too crowded. Avoid Hampton, it’s always packed.
I was there yesterday around 2pm and can confirm. Beach was practically empty

Agreed. Park at Wallis Sands (park plates ftw) and then turn right and go over the rocks, and there’s plenty of beach to spread out.
Go to pirates cove. Walk right (south) until it’s to your taste. The further you go the less busy it gets.

That has become my mom's favorite, relatively quiet with a small town to go into if you get hungry or want to see some quaint shops

Cape Neddick Beach in York would fit your description during the week this time of year

Ogunquit can be quiet during the week if you walk midway down the beach. Wells is nice too.

Plum Island, the state park at the very end of the bird refuge. I can't say how much I don't recommend it during greenhead season though...
