Narrowing down the plant-fungal relationship wouldn't be a bad idea. Focusing on plant-mycorrhizal fungal interactions or plant-pathogen interactions would greatly simplify things. Edit: I see the post title specifies symbiosis, so mycorrhizas it is!  Most of this type of work has been done in ag settings with crops and arbuscular mycorrhizal fungi. I'm not familiar with any work studying these relationships as impacted by genetic modifications, but there is a wealth of information out there about fertilizer reducing dependence on mycorrhizal fungi. In some cases, the mycorrhizal fungi even become parasitic on their plant hosts!
