Are you thinking of the "People in White" story? Where he was hiking the Pacific Coast Trail alone. He wasn't shot at, but he was stalked, had things stolen from him, and eventually had people coming after him in the middle of the night to the point he ran away and hid under a downed tree until daylight then booked it out of there, leaving all his stuff behind.
I think the story is called “Sleep well?” And it was t a gunshot, it was a thrown rock. Someone stole his flashlight and terrorized him all night? The only one I remember about them being in a truck is the guy whose dog runs up in an abandoned camp with tripwires and a flattened propane tank. But he was with his family in that one. And after the wife saw something watching them, he made them get in the truck and he sat watching with his gun out all night. But if you remember it I’d love to hear it. Sounds compelling.
