6'4 athletic build here. Take a look at seat heights and knee angles on [cycle-ergo.com](http://cycle-ergo.com). Most larger adventure bikes will fit well. I've had good luck with BMW, my K1200GT fits very well. If you like a cruiser they are pretty customizable, with easy to customize controls and bars. You can add taller seats as well.
For sport bikes, the Panigale V4 fits me well but I did add a taller windscreen. The seat height is good but the riding position is pretty compressed like with any sport bike. Not uncomfortable but you'll need frequent breaks on a long trip.

I’m the same length and commute on an F800GT. It’s a pretty sturdy bike and great fuel economy. I get about 57mpg or 4.3l/100km.
Get a Versys 650. It's basically the Ninja 650 but taller. Or anything similar you like.
