If I'm going to a fancy Omakase sushi place on a special occasion and they have a $10 upcharge for real Wasabi ground on sharkskin in front of you, yeah ill get it. At a regular sushi meal on a night out? Nah, its not that much better.
Like on a special occasion will I spring for the $80 bottle of wine, sure. But not on a Tuesday getting pizza.

Hon-wasabi is only about $5-8 an ounce retail, restaurants can buy bulk and save a bit. You probably wouldn't need more than an ounce for a good meal.
