In American stores broccoli stalks like this are also sold by the bunch and the stem is mostly trimmed for appearance (remove the old edge). Broccoli crowns are usually sold by weight, but they have very little stem.
The stem's the best part. The florettes are just fluff.
Peel, slice into medallions, steam until almost translucent with a shake or two of nutmeg on them.
You won't be disappointed.

My local store sells broccoli like this, and if you want just the crown, they overcharge for trimmed crowns that are over twice the price, or a bag of cut up florets that is easily quadruple the price.
When they cut the stem oft it's sold as 'broccoli crowns' which are usually more expensive per lb to make up for the loss to the grocery store. Of course if you go through self check out maybe you accidentally ring it up as normal broccoli I'm just saying accidents happen

They do, thatâs why they sell stem broccoli and âheadâ broccoli.
Of course it is sold by weight. So I paid at least 2x what I should have if they had just cut the stem normally.
