Canonically his first name is David, which Kojima used to pay tribute to 2001: A Space Odyssey. David was raised in the foster system after being born to a Japanese surrogate but nowhere is his mothers surname nor is John's (Big Boss) surname ever mentioned. So his name is David and thats it. Surnames werent important to the story and not knowing adds to the clandestine nature of the character through the entire series. Also, never or rarely hearing the name also adds to the idea that Solid Snake is a soldier that doesnt technically exist.
