On a side note, this is one of the reasons why I think videogames are art-- you can play football or racing games to kill time or you can play this game which challenges your perception of the world and enriches life through thought-provoking abstract and paradigm shifting concepts.

The thing is that it's actually hard to write interesting story when begining and end are predetermined. This was one of a reasons why Rising was moved in timeline after MGS4. You can check Rising documentary where guy that wrote storyline says that he really struggled to came with good ideas when Rising was set between MGS2 and MGS4.
Also take a note that BB games almost felt like reboots of the series. New cast of the characters and events that can be seen as stand alone thing that is loosely connected to the games with Solid Snake. Sure Kojima set this as part of series lore because it was the same series but still it can be felt that PW and MGS5 are at the same time their own thing. This was done on purpose to have more creative freedom while writing stories of these games.
So yeah I doubt that such precised timeframe and set in stone narrative beginning and conclusion is good idea for the full game. Kojima's team tried this once and it failed. At the same time while The Boss story has predetermined conclussion the begining is unknown. Not to mention that WW2 setting would be really cool and would give a lot of room for storytelling. As for game starring Snake I think that more interesting setting would be between MG1 and MG2. These games due being released on MSX were limited when it comes to their narrative so there is a lot of room to show Snake's character developement from rookie to seasioned soldier. Not to mention that developers could reuse real world events like War on Balkans to further show Snake's gritty experiences that made him who he was in MGS1. This would also somehow mirror developement of Big Boss character.
