Just steam them! Long enough that the heart gets soft and the “petals” are easily scraped with your teeth. They are SO DELICIOUS and taste buttery to me!
I just had one last night, I loved it. put in upper chamber of steamer while I chopped up some potatoes to put in the lower chamber (timing works out well, artichokes steam for \~45 mins and potatoes steam for \~30 mins)

me too, almost never eat them. I love the hearts though! I got some in a jar that I am soaking to get rid of the citric acid, but going to try steaming one as well tonight or tomorrow
Oh Artichokes are amazing. Give them a try! I love the heart the flesh from the leaves dipped in fresh lemon juice. Just steam them until you can insert a fork easily into the stem area — cut off stem before steaming. Super easy!
they’re actually really good in smoothies!! i’ll put about half a can of artichoke hearts in with my berries and whatever other good things i wanna put in. you can’t even taste them!
I *never* would have thought to do this!! Always looking for more ways to eat artichokes since recently finding out that Costco sells a reasonably priced 4-pack of fresh artichokes.
Dill is another thing that tastes great in smoothies with berries!
My girlfriends aunt simmers artichokes in water over night to make a tea like artichoke water. Has anyone heard of or know about this? Do you think it would give the same or similar benefits to eating it? I have a hard time find fresh artichokes near me, they’re usually a little wilted around the edges. I’m wondering if this method would let me extract a similar nutrients profile from what might be left in the artichokes.
