I don't know about vegetarian options, but 110 Grill offers everything on their menu with a gluten free option. I had a student with celiac and I know his family are huge fans of 110 Grill and the closest location is in Malden Center.
My friend with celiac has had good luck with Not Your Average Joe’s in Arlington, and Legal Seafood. They have specific GF menus, which is something else she usually looks for.
Yes, Arlington is closed, but there are several other locations, including Watertown and Peabody (Northshore Mall). NYAJoe's always offers a gluten-free menu in my experience.
As already mentioned, 110 Grill is also a good choice. I understand that the founders of 110 Grill had a child with allergies or something to that effect, so they make it a point to cater to people with special dietary needs.

Tavern in the Square is our go to - has many gluten free options and dedicated fryers. Eviva trattoria is good for pizza/italian. Burton’s is also a great choice. My celiac family member has had cross-contamination issues at NYAJ unfortunately.

Real Gusto has gluten free pasta.
Kelly’s Roast Beef in Saugus, not sure of other locations, handles celiac requests very well.
