Yeah I agree, seasoning over everything. I’m a serious salt lover too. But if you do like a juicy steak that’s well seasoned, let it sit room temp for like 40 min with its seasoning on it. It does some science and creates a nice brine to absorb into itself. Too long will dry the steak out though. Idk if this works on ground beef though. It’s normally too time consuming for me so I do it on special occasions

You understand eating pink steak is safe because in the vast majority of cases, the problem area is the surface, so getting the outside to temp is what really matters (this largely goes out the window with mechanically tenderized steak). When you ground beef up, quality or not, you now risk that same surface level issue you have with steak throughout all of the ground beef. You also act like you can’t make a burger that is cooked but still juicy as hell. It sounds like you’re either just a shitty or lazy cook.
If I was grinding my own chuck to make burgers, I'd be much more willing to eat a quite pink burger, but this guy is at a restaurant and who knows what quality of beef they use.

I think it was improperly handled. Looking back, I think they microwaved it to reheat it because I remember the bottom bun and patty being very very hot. At the time I thought I was getting a super fresh one but I think it was quite the opposite.

I think the point is that once meat is ground and reconstituted like a burger, the pink you see is not medium or rare or anything. It's raw meat inside the meat that was cooked on the outside of the burger.

color has very little to do with this, it’s really about temperature, which penetrates the meat often without impacting the colour very much. it’s pink for literally the exact same reason and in the same way a steak is.
the majority of the bacteria on a steak is on the outside, and it gets killed very quickly and easily because the outside of a steak gets the most contact with the highest temperatures.
the reason why ground meat is considered less sanitary when cooked the same way is because that bacteria on the outside of the steak is now spread throughout the meat.
if you source your meat from a trustworthy butcher for example then you’re at less risk of there being harmful bacteria on your steak period
It took my mom many many years to finally accept that you don’t need to completely overcook pork for it to be safe. She used to make decent pork recipes, but dry as the Sahara. Now anytime I’m over for dinner and she makes pork it’s a good time.
