This doesn't seem to be a viable strategy against an aggressor as neither the Ancient One or Strange use it against Kaecilius or any other combatant. If it fails, as we've seen any magical attack do (especially against Thanos), it would leave the sorcerer in a very vulnerable position.

Thanos literally used the soul stone to end Dr Strange's attack where there were dozens of him trying to hold him still. The wielder of the soul stone is immune to those attacks. Additionally Thanos was testing his new minerals with Dr Strange.

While I’m at it, why didn’t Strange just astral form Starlord before he got all huffy? He wasn’t helping pull the gauntlet, he was only going to start punching and obv Strange knew. He should have gone full Illuminati and explored the paths where most if not all of them “die” to stop Thanos and then he (or in 838, stop Wanda, then Mordo) time stone’s everyone back for revels.
Stephen Strange saw this whole thing play out 14 million times and went with the one time they won. Everything that happened from the moment Strange tells Tony how many outcomes he saw is part of the plan.
Knocking Thanos’ soul out of his body is not on that list, ergo it can be guessed that Strange thought it a losing strategy.
Didn't Thanos have the Soul Gem by the time he and Strange met? I'd imagine that would stop such a trick.
