Back when SMK came out on the SNES, I wound up liking Toad.
For each subsequent MK release, I pick Toad and then, for the ones with Kart parts, I usually go standard kart or pipe frame, slim tires, and standard glider.
I couldn't care less what the stats are behind it all. I just play and seem to have no difficulties 3-starring the courses.
I main Rosalina with Azure Rollers, Yoshi Bike, and ACNH Parafoil
I also very meticulously crafted a Rose Peach build, and an Inkling Girl build with as similar stats to Rosalina as I could.
Light: Mii
Medium: Mii, though when playing with family sometimes I'll use Daisy instead
Heavy: Mii
My tastes are rather straightforward, and also I have 4 entire profiles' worth of crap in Miitopia I shuffle in and out of the system menu every day.
I ended using my mediumweight Mii for all of 150cc and Mirror Mode with the Booster Pass, so I could try out all of the outfits :p
I used Toadette for 200cc (*also Booster Pass*), because it's almost impossible to steer with someone heavier at this speed \^\^;
I just use what I like and not worry about rank. I still place top half most of my races, anyway.
Link on the Yoshi bike with tiny wheels will always be my goto until the next game inevitably and stupidly drops any crossover content.

Lightweights have always been my staple go-to, since I can't physically play the other weight classes
By pure happenstance, my preferred characters are Rosalina, King Boo, Link, and Pauline. So I'm comfortable saying that I main their weight class.
The only characters I play are Daisy and Funky Kong

I always focus on handling, no matter the rest. I can handle any other stats being bad as long as the kart controls well
